Simply the Best Brownies

 

 

Somebody asked me for the recipe for these but I can’t remember who so here it is.  I had to rewind a pause the TV show about 30 times to write down the recipe.  I didn’t know about the book then.  Marcel Desaulniers is a master.  This is a gateway recipe for more and more extreme chocolate desserts.

People always doubt the ‘BEST’ part, but they are.   I find that we eat three-quarters of a pan and freeze the rest after 3 days.  This is opposed to eating three-quarters before the mandatory 30 minutes of cool time are up.  They are just that satisfying.

Here is a typical conversation:

Me:   “Have a brownie.”

Them:  “Well thanks but I’m sure they are not the best.  My Granny makes the … Wow these are good.  Mmmmm.  They are everything I have ever wanted in a brownie!”

 


 

Simply the Best Brownies

 

Preheat oven to 325°

 

Sift

Melt in Double Boiler

Whisk

Plus

1/2 cup + 2 tsp flour

8 oz butter

6 eggs

1/2 cup sour cream

4 TBS Unsweetened cocoa

6 oz Unsweetened chocolate

2 cup sugar

 

2 tsp baking powder

4 oz semi-sweet chocolate

2 tea vanilla

 

½  tsp salt

 

 

 

 

 

1.     Sift flour, cocoa, baking powder, and salt.

2.     Melt butter and chocolates in double boiler with silicon spatula on low setting until smooth.

3.     Whisk eggs, sugar, and vanilla until light.  (Mixing is acceptable for denser texture.)

4.     Combine with chocolates from double boiler.

5.     Combine with sifted ingredients.

6.     Add sour cream.

7.     Butter and flour a 16×8 pan. 

8.     Cook for 30 minutes or until a toothpick comes out dry.

 

I did re-write this recipe because it was needlessly complex.
